Thought I'd share two contrasting e-mails with you. Here's the first one, from one of our frequent customers:
Can you add more of the resistant starch to your recipe than you do? I would love to eat a pasta that had little or no calories as a diet plan!
This is a reasonable request, and I wish we could satisfy it. Unfortunately, there are some hard technological limits even for us, and after a certain point of adding more fiber texture imperfections do start to arise. Also, and perhaps more importantly, the fiber we use is not cheap. Adding more would make our products cost-prohibitive to a lot of people.
Now here's the second e-mail:
Have you considered decreasing the fiber amount a bit? Say, maybe to 10 grams of fiber per serving? Don't get me wrong -- it is still a great product (otherwise I wouldn't have blogged about it) However ... Considering how little fiber the average American consumes, 18 (or more) grams at once can lead to bloating and intestinal discomfort.
You can't please everyone all of the time! As I replied to this e-mail, I would note that bloating and discomfort are really much less of a concern with our resistant starch than with cellulose, inulin, or almost any other fiber on the market, including those found in fruits & veges. This is because while the bacteria in your gut will ferment most fiber in the proximal colon, which gives of gas and causes bloating, our resistant starch is so resistant that even the bacteria can't break it down until the distal colon, at which point it's almost "out of the system" and therefore won't cause any distress.
