The best part was the smell of freshly baked-bread, which permeated the entire building. It must be great to work there, at least for the first week.
I forgot the biscotti samples the first time, so I actually had to make two trips to the factory - fortunately, they're located fairly close by. But the meeting went well! We toured their facilities, and got to look over the biscotti machinery. I think our flour-replacement mix should work well on it. Then we tried some delicious soft pretzels, which they're also going to try producing using our mix.
If everything goes according to plan, we'll be off to a great start: a sweet snack (biscotti), a salty snack (pretzels), and a main dish (pasta). A great way to end the week. Have a good weekend, and see you on Monday!

We've had the devil of a time finding someone to produce our cookies. So far we've sent trial material to four different cookie manufacturers, but we haven't yet found the right situation.
With any luck the fifth time will be the charm: today we're going to see a man about some biscotti. Wish us luck!
